Alfalfa extract is the whole plant extract of the leguminous plant Medicago sativa L.

Alfalfa extract contains isoflavone derivatives such as saponins, lusitol, alfalfa, comestol, formononetin, daidzein, alfalfa, citrulline, and canavanic acid.It contains 21.8~37.6% protein and 4.0~9.5% sugar on a dry weight basis.Tofu contains alfalfa phenol.  The average crude protein content of alfalfa mixed hay is 18.9%, crude fat is 3.37%, nitrogen-free extract is 29.97%, crude fiber is 26.80%, and ash content is 7.03%.Fresh grass contains about 0.50% N, about 50.13% P2O, and about 0.37% K2O.
