What is Lycopene?
Lycopene, derived from tomatoes, is a bright red carotenoid pigment and phytochemical found in tomatoes and other red fruits and vegetables. It is a potent antioxidant with no vitamin A activity.
Foods like red carrots, watermelons, gac, and papayas also contain lycopene. Despite its chemical classification as a carotene, it doesn't possess vitamin A activity.
Lycopene plays a crucial role in photosynthesis, photoprotection, and pigmentation. Due to its intense red color, it serves as a food coloring agent (registered as E160d) and is approved for use in various countries.
