Soy isoflavones are flavonoids, a type of secondary metabolite formed during the growth of soybeans,
and a biologically active substance.Because they are extracted from plants and have a similar structure
to estrogen, soy isoflavones are also called phytoestrogens.

Soy isoflavones have a typical structure of isoflavones. The conjugated glycosides are hydrolyzed by
enzymes or dilute acids to remove the sugar groups and form soy isoflavone aglycones.Free soy
isoflavone aglycones include genistein, daidzein and daidzein.Conjugated soy isoflavone glycosides
are the glucoside type, acetyl glucoside type, and malonyl glucoside type of the above three aglycones.
